Spicy Italian Sausage with Charred cabbage & Bacon ends



  • 1 package of greenwood pastures spicy italian sausage cut into bite size pieces

  • 1 small cabbage , quartered 

  • 1 lb of bacon ends or thick cut bacon cut into bite size pieces

  • 1 small white onion diced 

  • 2 cloves of garlic chopped

  • White rice for serving 

  • Mustard for serving 

  • Parsley for serving



Over medium heat in a large pan, cook your bacon ends or pieces of bacon. 

Cook until nice and crispy. 

Set aside. 

If there is a lot of bacon grease, dump some out. Leave a small amount in the pan for your cabbage. 

Now turn the heat back up to medium high and add in your quartered cabbage. Do this in multiple steps to avoid crowding the pan. Char your cabbage. This should take just a few minutes. 

When the cabbage is charred to your liking, set aside to cool. 

In the same pan, add in your spicy italian sausage. 

Cook for 5-10 minutes. 

Add in your white onion. 

Season with salt and pepper. 

When the onions are translucent and soft, add in your garlic. 

At this point, cut the heat and return to your cabbage. Slice very thinly. 

Add your cabbage to your bacon, sausage mixture. 

Cook until soft. 

5-10 minutes. 

Serve over white rice. 

Top with mustard & fresh parsley!
